Early on in our development as human beings - we used the process of fermenting food to turn normal and sometimes even toxic food - into rich, nourishing, and health-boosting delights.

and even tea are just a few of the foods that owe their flavor and health benefits to the process of fermentation.
But the funny thing is… as time goes by and the world is becoming more and more industrial - we are losing touch with the same dishes that made us human.
The reason is - normal fermented food like sauerkraut, yogurt, and even your "healthy" Kombucha is no longer easy to sell.
Because today most of the fermented food is produced in a factory and needs to be transported for long distances to reach the supermarket shelf, and then your home.
In order to survive this journey and ensure food safety. The same healthy bacteria that are probiotic food are praised for - need to be killed to keep them extra safe for eating and extend their shelf life from days to months. You might know this as the process of pasteurization where food is heated up to high temperature or sterilized using food chemical additives.

Sometimes, in the case of "Probiotic yogurt" only a few strains of good bacteria are added back in – in addition to sugar (which is used to cover the taste) That fake sugar contributes to an overgrowth in yeast in your body. And we can’t forget the additional preservatives and thickeners added in.
So we are left with "dead foods" that are lacking the incredible health benefits healthy bacteria have.
The same healthy gut bacterias that are amazing for your health - are the enemy of your average big box store or neighborhood supermarket.
