I've always been a foodie…

And I love to share food with friends.

Enjoying homemade meals or getting together in cafes, bakeries, and restaurants…

Which is why what happened next was so heartbreaking…

You see, I always considered myself to be in perfect health (or so I thought).

For me, food is medicine, and health is wealth. I eat mostly plant-based with the occasional pizza or some butter on my bread, avoiding refined sugar and additives as much as possible…
Naturally, I felt everything was fine…

But with time, I started noticing a pattern…

Whenever my husband and I would go out to eat at my favorite Italian restaurant, I would quickly become very bloated and experience discomfort in my stomach…

Sometimes I would even feel nausea…

At first, I thought it was just a "one-off" sort of event, or I imagined that it was because I had eaten too much carby-pasta, or fatty tiramisu…
So I switched to "safe" comfort foods – my beloved Greek salads and Spanish omelets…

Sure these “healthier” options would cause me less hassle…

But that only made matters worse…

Reluctantly, I took my doctor's advice and tried going dairy-free for a couple of weeks…

The results were astonishing!!!
It was like winding back the clock – I felt 10 years younger!

I had vibrant energy beyond my imagination, a crystal-clear mind, and my skin was clear and radiant.
Physically, I felt great… but emotionally, I was upset and confused…

How did this happen?

My doctor put it in simple terms: When your digestive system doesn't function fully, your entire health, energy, and well-being will suffer.
But I didn't want to give up dairy; it's in all my favorite foods!

I felt like I was going crazy, wildly craving cheesy pizza.

…I mean…what is pizza without CHEESE? 

Boring, that’s what…

Seeing my friends enjoy mac and cheese or even a bowl of granola with yogurt…I felt like I was missing out, deprived of my favorite food.

I desperately needed my cheese fix!
At first, I hoped the local grocery stores would save me…

But that glimmer of hope died quickly…

The store-bought vegan cheese experience was utterly disappointing…

In my experience, these dairy-free alternatives lacked the rich, creamy texture of the cheese I missed so much…

Bland and lifeless…

Instead of melting smoothly, they crumbled to pieces on my plate…

The texture was so off-putting that it felt like I was biting into a tasteless sponge rather than indulging in a delicious cheese treat.
But as if this wasn’t bad enough…

Store-bought dairy-free food only gets worse when you read the list of ingredients…

In order to make up for what is lost in the process of removing dairy, lots of other ingredients are added.
Along with added sugar, salt, and fats, you'll find many hyper-processed ingredients that are known to be bad for you, like xanthan gum, guar gum, or soy lecithin.

This kind of ruins the whole idea that dairy-free should be good for you. No thanks!
On top of all that, dairy-free products are just so expensive these days.

It's as if the term "plant-based" or "dairy-free" allows these companies to charge 20% to 180% more for almost the same product…

And they still taste bad!

So I had no choice but to give it up or start making everything at home.

Cooking at Home Seemed Easy, I Thought…

As I clicked around Google, I got so excited, looking at all those pretty photos of scrumptious-looking, creamy, dairy-free food…

Nope…a total disappointment!
Those food blogger recipes are nowhere near as good as they look…

But it gets worse…

Many times, those recipes would use the same store-bought, expensive, and unhealthy ingredients in their recipes, trying to make it taste right.

And yet, it still couldn’t match the real thing!
“Feels like chewing on a flavorless sponge rather than indulging in a delicious treat”

“Bland, tasteless imitation, lacking the rich, creamy satisfaction”

“Like settling for a subpar alternative that can't compete with the indulgent taste of real cheese”
What a massive waste of time and money…

So much effort and frustration, only to serve up disappointing food at home. But I believed, "It must be possible."

So we pushed on for months and months, relentlessly searching…testing…tweaking every good recipe we found…

We even took cheesemaking courses and joined different cheese groups.
And after countless kitchen experiments, our Artisan Plant-Based Cheese was getting kind of good… But still, it was nowhere near as good as the "good old cheesy" days.

My heart was sinking…

I was losing hope that I would ever truly enjoy cheese again…

In a Moment – Everything Changed!

I was in the kitchen, enjoying a cup of coffee one Sunday morning…

When Rob burst through the front door, shouting, "Alex, Alex, Alex! Darling, let's go – I've found one!"...
His face lit up with sheer joy as he practically shoved me into the car. As we sped along the road, he excitedly shared his secret mission.

For months, he had been exploring every local market, searching for a stand that excelled at creating delicious plant-based cheese…

Just so I could enjoy my favorite pleasure in life again…

And now, finally, he had discovered a small business at a Sunday market stall that specialized in the most incredible plant-based cheese!
We arrived at the bustling market and found the quaint stall, where we were warmly welcomed by the owner – a genuine artisanal cheese maker from a quaint village in France, with a passion for crafting dairy-free delights.

Driven by their own family's dietary restrictions, this talented cheese maker had spent years with his family perfecting the art of plant-based cheese…

They had truly cracked the code to…

Unbelievably Indulgent Melty & Soft Mozzarela – AND Dairy Free!?

It wasn't just his creamy, mouthwatering melty Mozzarella... or the tangy, indulgent Feta Cheese, Cheesy Parmesan or any particular one of his exquisite artisanal plant-based cheeses...

It was ALL of it!!!

Every single plant-based cheese creation he offered surpassed any vegan cheese I'd ever tasted before.

And of course... it was all 100% plant-based... Yes, good for you and the plant.

But how?

Where Plant-Based Cheese Making Goes Wrong

"The problem isn't with the idea you can make cheese out of plants."

He said, with a warm smile...

“Actually, the problem is when people try to make plant-based cheese they focus too much on the consistency or the color - and forget the most important thing - the flavor!

You see...
Classic cheeses like Parmesan, Camembert, Feta or Ricotta have hundreds of years of tradition behind them.

it's not enough to just blend a couple of ingredients together, add some color, and hope it looks the same...

The tanginess has to come from the same process that cheese usually goes through... fermentation.

Or if we want to have this nice cheesy flavor, we have to add some spices that have lots of Umamni in them, otherwise, it will be just too bland.

That's why supermarket cheese never tastes good.

They can't take time and put the extra effort to make it really really good"
And I want to tell you another secret...

The truth is...

You don't even need milk in plant-based cheese making – In fact, you can actually create better plant-based cheeses without it...

In traditional Dairy cheese making milk is the base for flavor, texture, and consistency – But other ingredients can create flavors and textures that work better with each plant-based cheese recipe.

You just need the right ingredients for the job…
You see, plant-based ingredients have a much wider range of flavors and textures... They behave differently.

So you need to match them carefully with the type of cheese you want to create…
Therefore, you can't just "swap" ingredients, but keep the rest of the recipe the same.

That’s just a disaster waiting to happen for your taste buds!
Creating new cheese recipes from scratch might seems, but once you have a good base recipe, and you mastered the basics -  the rest is easy.

In my opinion... Plant-based cheese recipes are often better… They have delicious textures, aromas, and brilliant flavors!

Often much better than the traditional dairy-based recipes they were inspired by.

Soooooo much better…

We came home that day, with warm hearts and happy bellies. We had our first "Artisanal plant-based cheese" recipes...

And we had received a masterclass on "Artisan plant-based cheese" making.

As we celebrated the best dairy-free baked camembert our little kitchen had ever known, the next chapter in our journey became clear…
